Coffee Culture
Why dark roasts deserve a second look.
Somewhere along the way, “specialty coffee” became synonymous with ultra‑light roasts and tasting notes that sound like wine labels. While we love a delicate pour‑over as much as anyone, we also believe dark roasts can be just as expressive when sourced and roasted with care.
At Dark Roaster, our approach to darker profiles is rooted in restraint. Instead of pushing beans to the brink of carbonization, we extend development just enough to build sweetness and body while preserving the character of the origin—whether that means plum‑like fruit in a Colombian or savory spice in a Sumatran.
In the full article we break down how we design roast curves, why we choose particular processing methods for darker roasts, and how to brew them at home without veering into bitterness.
