The story behind the roast.

Dark Roaster began with a single cast‑iron pan, a bag of green beans from a friend’s family farm, and a stubborn belief that dark roasts could be both bold and beautifully nuanced. Night after night, our founder experimented with tiny batches over a gas flame, listening for first and second crack, chasing the elusive moment where smoke, sweetness, and structure fall into perfect balance.

That obsessive curiosity carried into our first tiny café—a 12‑seat space tucked into a converted loading dock, filled with the smell of fresh beans and the clink of ceramic. Word spread quickly among designers, baristas, and night‑owl founders who were searching for something darker and more layered than what they were finding elsewhere.

Today, Dark Roaster occupies a sun‑washed corner in the Riverside District, but that same spirit remains at the core of everything we do. We still roast in small batches, we still taste every new lot as a team, and we still believe that a truly great cup of coffee should slow time down—if only for a few minutes.

Our mission is simple: honor the people and places behind each bean, create a space where our community feels genuinely seen, and serve coffee that makes you pause, breathe in, and notice just how much flavor a moment can hold.

Sustainable sourcing, from soil to sip.

We believe that exceptional dark coffee starts long before beans hit the roaster. Dark Roaster partners with growers who care as deeply about soil health and worker wellbeing as they do about cup quality. Many of our relationships were forged over farm visits, shared meals, and long conversations about how to build a more equitable coffee future.

Our sourcing focuses on shade‑grown coffee, biodiversity, and transparent pricing. We prioritize producers who invest in their communities—funding local schools, replanting native trees, and experimenting with regenerative agriculture practices that keep their land thriving for generations to come.

Every bag on our shelves includes the region, farm, process, and flavor notes so you can trace your coffee back to its roots. When you drink Dark Roaster, you are not just tasting the roast—you are tasting the story of the people, climate, and craft that brought it to life.

Soil‑first philosophy

We prioritize farms that practice shade‑grown agriculture, composting, and low‑intervention farming that keeps ecosystems in balance.

Transparent trade

Our buying practices favor long‑term contracts, above‑market prices, and clear communication with producers at every step.

Investing in origin

A portion of every bag of beans sold at Dark Roaster supports producer‑led initiatives—from water access to youth training programs—in the communities we source from. Coffee should create opportunity at every step of the chain.

Our roasting and brewing ritual.

Every drink at Dark Roaster passes through a carefully considered process designed to honor the work of producers and the expectations of our guests. From the first sniff of green beans to the final pour, we treat each step as an opportunity to add care and intention.

Select

We begin with cupping sessions of green coffee from our partner farms, seeking beans that can handle the depth of a dark roast without losing their character.

Roast

Our small‑batch roaster allows for precise heat control, letting us stretch development time to build sweetness while avoiding the ashy notes that can plague darker profiles.

Dial‑in

For every new roast, we dial in espresso, pour‑over, and batch brew recipes, adjusting grind size, dose, and extraction time until the cup sings.

Serve

Finally, we train our baristas to reproduce that perfect cup, from consistent tamp pressure to milk texture that complements—not masks—the coffee.

A third space for the neighborhood.

Dark Roaster is more than a coffee bar—it is a daily touchpoint for our community. We designed our space to be flexible enough for solo laptop days, intimate one‑on‑one chats, and the kind of spontaneous group gatherings that only happen when people feel at home.

Our calendar is filled with cupping sessions, vinyl listening nights, local artist pop‑ups, and panel discussions with founders and creatives who shape the city. Many of these events are free or pay‑what‑you‑can, with proceeds flowing back into the neighborhood organizations that keep our streets vibrant.

We are intentional about who we partner with, from the bakeries whose pastries grace our counter to the roasters we feature in guest spots. When you support Dark Roaster, you are also supporting a network of makers, growers, and neighbors who believe that good coffee and good community are inseparable.
